Oh flour tortillas. How I have missed you! It really is little things that I have begun to miss, things that you really dont even think about when you can eat them. Austin and I love Mexican and we have it once a week or more! Our favorite Mexican restaurant is Los Bravos and its about 2 minutes from our house When we go there I always get the yellow corn hardshell tacos and while they are great and I love them, I really really miss flour tortillas. They taste better, they fold and dont break, and you can do alot more things with them that the hardshell ones just cant do!
So..everywhere I looked people said that you would just have to eat corn tortillas, there just wasnt another choice for gluten free people. Then I was googling one day and came across this super easy and awesome recipe!! The tortillas taste exactly like the regular ones! I was thrilled! I cant remember the last time I could enjoy a quesadilla, or quesadill-lah if you are Napoleon Dynamite’s grandma, hehe. Anywhoo, they are delish! And you can put whatever you want in them, these are just my suggestions!
What you need:
-1 GF tortilla recipe (above)
-1 cup shredded chicken (or none if going veggie)
-red peppers/green peppers
-oil for frying
-mozzarella cheese (or whatever kind you like)
1.) Start by making the GF tortillas. This takes about 20-30 min. While you are making the tortillas cook your chicken so everything is done around the same time. After chicken is cooked shred and set aside.
2.) Once the tortillas have been fried you can assemble the quesadillas. I do cheese on the bottom, then all the veggies, chicken and then more cheese. Then put the other tortilla on top.
3.) Put the quesadilla in the frying pan and just cook until cheese melts, about 2-3 minutes on each side, you dont want it to burn! They are hard to flip, some of the veggies will fall out, so just flip over as fast as you can!
4.) After they are cooked you can cut into little triangles! I served with Uncle Ben’s 90 second Spanish Style rice
