This is my attempt at branching out since I have so many desserts! Hey, thats not a bad things right?! I know I need to have a little more variety though! Austin had never heard of or had falafel before! Crazy! Falafel is like a hummus patty basicially and really good! At my old job there was a little Falafel place around the corner that everyone would order from all the time and that’s really when I fell in love. Unfortunately falafels are wrapped in gluten filled pitas and also contain flour. So, after combining 2 recipes I found here is a gluten free version! The recipe for falafel is here and her description and picture made my mouth water!! I found this recipe for gluten free tortillas on Pinterest and it is AWESOME!!! The tortillas taste soooo good, so like the title says no more naked burritos! But, also no naked falafel! I know that falfel is traditionally wrapped in pita, but I dont know of any gluten free pitas out there and I think making them would be a little bit of a challenge. The tortilla worked fine and tasted great with it. Not as soft as a pita and harder to make a little wrap/sandwich but it did the trick!!
What you need:
* 1 can chickpeas
* tortillas—>recipe above
*2 Tbsp White rice flour (Bob’s Red Mill)
*2 Tbsp parsley
*2 cloves garlic
*1 tsp cumin
*1 tsp ground coriander
*1/2 tsp chili powder
*1/4 tsp salt
*1/4 tsp pepper
*2 Tbsp Tahini (for sauce)
*2 Tbsp Lemon Juice
1.) Preheat oven to 400 degrees. I would go ahead and make the tortillas first because they take a little longer. Use the recipe above.
2.) Now work on the falafel: Put chickpeas, seasonings, and flour into food processor and grind until smooth.
3.) Make patties with your hands and place on baking sheet. Brush patties with olive oil. Bake for about 20 minutes or until brown and crispy.
4.) For the sauce just add the Tahini and lemon together.
5.) Put the falafel on the tortilla, add your fixins and sauce, or whatever else you desire!!
