Gluten Free Chicken Parmesan Casserole

  I know you are thinking, you have already done a post about chicken parmesan, im confused?! Yes, you are correct but this is a yummy, cheesy, biscuity chicken parmesan version! I took this recipe from Pinterest and transformed it into something a little bit different. There was a little ground beef recall out here so I really didnt want to buy any ground beef, Im paranoid like that I guess! Anyhoo….so I thought what else can we do? We eat ALOT of chicken around here so I knew I had to somehow figure out how to incorporate that. So, now here is the birth of the chicken parm casserole! I actually had biscuits leftover from my Chicken and Dumplings post and froze them, so the biscuits were already made, making this really easy!!

What you need:
-6 chicken breasts
-1/2 jar pizza sauce
– 1/2 cup GF breadcrumbs (Kinnikinick)
-1 egg white
-1 cup Mozzarella Cheese
-Carol’s yummy GF biscuits—> use this

Directions:
1.) Dip the chicken in egg white and then coat with breadcrumbs. I cooked in a skillet for about 5 minutes just to get them a little cooked and crispy before having everything else piled on top of them!
2.) Place chicken in baking dish. Pour sauce over top chicken. Next layer with the cheese. Place biscuits on top of cheese.
3.) Bake for 30 minutes at 400 degrees until the biscuits are golden brown, cheese and sauce are bubbling & chicken is cooked!!!
