GF/DF Snickerdoodle Cake with Brown Sugar Cinnamon Buttercream

Austin and I are now co-leading a small group with another couple we are friends with. Our previous leaders from our old group set the bar really really high & every birthday they always had treats for that person or people. We are really trying hard to keep that going, so I made a cake for our September birthday people!! Again, I saw this recipe on Pinterest and it looked amazing and I just had to try it! Im sure you are tired of hearing me say the word Pinterest, but if you havent already checked it out you should, it is awesome!

I didnt make as big of a cake as she did, we are not needing to feed that many people and I didnt have that much butter or powdered sugar on hand! I did pair down the recipe a little too, just so that there wouldnt be as much butter, etc.  There is alot of butter in this recipe y’all-yikes!!! I will be taste testing it tonight (Tuesday), but I can only assume from licking the bowl and tasting the frosting that it will be delicious!!

What you need:
For the Cake-
-4 cups white rice flour (Bob’s Red Mill)
-1 tbsp baking powder
-1/2 tsp salt
-1 tbsp cinnamon
-1/2 tsp xanthan gum
-1 1/2 sticks of butter (Earth Balance)
-1 3/4 cups sugar
-4 eggs
-1 tbsp vanilla
-1 1/4 cup Almond Milk
For the Frosting-
-2 sticks butter
-1/2 cup brown sugar
-1 tsp cinnamon
-4 cups powder sugar
-1/2 tsp vanilla
-1/4 cup almond milk
**garnish-whole cinnamon sticks**Directions:
1.) Preheat oven to 325 degrees. Spray & flour two 9 inch round pans.
2.) Mix together flour, baking powder, xanthan gum, salt and cinnamon in one bowl. set aside.
3.) In stand mixer cream together butter and sugar. Beat in eggs one at a time.
4.) Add 1/3 milk then 1/3 flour, and so on until you are done. My batter was really runny, so dont worry if it doesnt look very thick.
5.) Divide batter between pans and cook for 35 minutes. Let them cool for 5 minutes and then turn them out and let them completely cool before frosting.
6.) Now, make the frosting-beat together butter, brown sugar, cinnamon.
7.) Add in the powdered sugar and vanilla and beat. Add in a little milk at a time until you get a fluffy consistancy. If its too thin, add sugar, if its too thick add milk!
8.) After the cakes have completely cooled you can now assemble!!!
