When I started this blog I definitely had alot of requests for a gluten free chocolate chip cookie. I have tried a couple recipes that were already gluten free but they turned out very puffy and cake like and really did not resemble a cookie. So, this is actually a recipe that I adapted to GF/DF that we received at our wedding. One of my friends was so cute and bought us a baking sheet and attached cookie cutters and this cookie recipe.
Chocolate Chip Cookies are a definite classic with a side of milk (Almond Milk now a days!). It is nice to know that you can still have the things that you enjoy, there is no need to go without!!

What you need:
*3/4 cup sugar
*3/4 cup brown sugar
*1 cup Earth Balance Butter
*2 1/4 cup rice flour
*1/2 tsp vanilla
*1/2 tsp xanthan gum
*1 tsp baking soda
*1/2 tsp salt
*1/2 pkg Enjoy Life chocolate chips
1) Heat oven to 375 degrees. Mix the sugars, butter, and egg together. Then stir in the flour, baking soda, salt, and xanthan gum. Once the mixture is combined stir in the chocolate chips.
2) Cook dough in rounded tablespoons about 2 inches apart on an ungreased cookie sheet. Bake about 10-12 minutes or until they are light brown.
Makes about 40 cookies.
